Irish Apple Cake
A true Irish farmhouse apple cake that tastes great with or without the customary custard!

- 1/2 cup unsalted butter at room temperature
- 1/2 cup granulated sugar
- 2 large eggs
- 3 Tbsp whole milk or cream
- 1 1/4 cups all purpose flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/8 tsp salt
- about 3 Granny Smith apples, peeled and thinly sliced. Mine weighed a little over a pound after slicing.

- 3/4 cup all purpose flour
- 1/4 cup old fashioned rolled oats
- 6 Tbsp unsalted cold butter (cut in small pieces)
- 1/2 cup granulated sugar
- 6 large egg yolks
- 6 Tbsp granulated sugar
- You may substitute cream or half and half for the 1 1/2 cups of whole milk.
- 1 1/2 tsp vanilla
- Grease a 9-inch springform pan and preheat the oven to 350 degrees.
- Make the custard sauce ahead of time. Bring the milk to a simmer over medium heat. Meanwhile whisk the yolks and sugar until well combined. Pour a small amount of the hot milk into the egg mixture while continuously whisking. Add a little more drizzle, then return it to the hot milk in the pan and stir continuously while cooking until the mixture coats the back of a spoon. Use a silicone spoon or spatula to scrape the pan’s bottom and sides as it heats up while doing this slowly over medium heat. The mixture will thicken and turn velvety, but not to a pudding-like thickness. Don’t overcook it because it will continue to thicken as it cools or it might curdle. Stir in the vanilla.
- To prevent a skin from forming as it cools, pour the custard through a sieve (to catch any stray lumps) into a heat-resistant container or bowl. Cover the surface with plastic wrap. Put in the refrigerator until completely chilled.
- To make the streusel topping, combine the flour, sugar, and oats in a food processor and pulse until the butter is completely incorporated and the mixture resembles coarse crumbs. Put in the refrigerator.
- Cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time.
- Whisk together the flour, baking powder, cinnamon, and salt. Add the milk or cream and dry ingredients to the butter/sugar mixture and stir to combine.
- Place the batter in the prepared pan and spread evenly. Top with the sliced apples, and then the streusel topping. Note: The apples don’t have to be perfectly arranged, but try to get them in an even layer.
- Bake for 50 to an hour, or until the top is lightly browned and a toothpick inserted into the center of the cake comes out clean.
- Let cool a bit in the pan before removing. Dust with confectioner’s sugar before serving.
