Ingredients:
- 3 cups of pears, of any variety, that have been peeled, cored, and quartered
- 1 cup of apples, any variety, quartered, cored, and peeled
- 2 tablespoons lemon juice
- ¼ teaspoon cinnamon
- ⅛ teaspoon allspice
- ⅛ teaspoon ginger
- ⅛ teaspoon cloves
- Pinch of nutmeg
- 1. 12 cup Dutch jel pectin or a 75-ounce package of dry fruit pectin
- 1 tablespoon butter
- 5 ½ cups sugar
- 6-7 half-pint canning jars and lids, sterilized
Instruction:
- Pears and apples should be processed in a food processor until the fruit is finely chopped. Place the fruit in a sizable Dutch oven or other pot with a heavy bottom. Add the lemon juice, pectin, butter, cinnamon, allspice, ginger, cloves, and nutmeg.
- Bring to a rolling boil over medium-high heat. Add sugar and stir to mix well. Obtain a rolling boil once more, then boil for exactly one minute. Remove from heat; skim off foam with a metal spoon.
- Ladle jam into hot sterilized jars, leaving ¼-inch headspace. Wipe rims clean with a damp cloth; add lids.
- Process in a boiling-water bath for 10 minutes. Transfer jars to a towel and cool completely. Check the seals, and store any jam that didn’t seal properly in the refrigerator.
