How to Make Voila Garlic Chicken

Ingredients:

  • 2 large chicken breasts, cubed
  • 1 Tbsp canola oil
  • Garlic powder, to taste
  • Salt and pepper, to taste
  • ¾ cup water
  • 1 bunch broccoli, cut into small florets
  • 2 cups carrots, sliced
  • ½ to 1 can sweet corn, drained
  • 1 lb. rotini
  • 2 cups heavy cream
  • 1 packet Ranch seasoning
  • ¾ cup grated Parmesan

Instructions:

Stovetop Method:

  1. Cook rotini according to package directions until al dente.
  2. In a large skillet, heat oil over medium-high heat.
  3. Season chicken with garlic powder, salt, and pepper.
  4. Sauté chicken until browned on all sides.
  5. Remove chicken from the pan.
  6. Add water to the skillet and pour in broccoli florets to steam them, tossing occasionally, until crisp-tender. (Note: cover the pan if you’d like to expedite the steam process)
  7. Meanwhile, place carrots in a microwave-safe bowl and cover with water. Microwave for about 4 minutes, or until crisp-tender. Drain.
  8. Add carrots, chicken, and corn to the pan.
  9. Combine heavy cream and Ranch seasoning in a bowl and pour into the pan.
  10. Stir skillet contents and bring cream sauce to a boil.
  11. Reduce heat to medium-low and allow the mixture to simmer for 4 minutes or until thickened slightly.
  12. Add rotini to the skillet and mix well to combine.
  13. Sprinkle with Parmesan.

Microwave Method:

  1. Combine all ingredients except Parmesan in a large microwave-safe bowl.
  2. Cover and microwave on high for 5 minutes.
  3. Stir and microwave for an additional 5 minutes.
  4. Stir again and microwave for another 2-3 minutes, or until the chicken is cooked through and the sauce is thickened.
  5. Sprinkle with Parmesan and serve.

Tips:

  • For a lighter version, use half and half instead of heavy cream.
  • You can add other vegetables to this dish, such as peas, green beans, or zucchini.
  • This dish can be made ahead of time and reheated when ready to serve.
  • Serve with a side of bread or rice to soak up the delicious sauce.

Growing up, frozen packets of pasta with garlic chicken were a staple. I used to really enjoy a pasta dish by Birds Eye called Voila Garlic Chicken Pasta. Before tossing everything into the skillet, I would separate the broccoli and carrots and declare it a balanced meal. The other night, while searching for a quick supper, I was reminded of the simpler times when frozen pasta was the norm, with little to no vegetables and a constant need for extra sauce.

The best part? It’s freezer-friendly! I put it in a plastic bag that is safe to store in the freezer, and when you’re ready to eat it, just toss it in a skillet with three tablespoons of water and cover. It takes roughly ten minutes, and the second time around is EXACTLY as good!

Read on for my freezer-friendly version of garlic chicken pasta that has the perfect amount of sauce!

You know what I DON’T REMEMBER? Looking at serving size. I just ate the entire bag. Soccer served me well for SO LONG. It was actually a saving grace. I basically ate anything I wanted and didn’t gain any weight.

Since then, I’ve made my own version, and I have to admit that it beats frozen Garlic Chicken Voila. It has pasta, seasoned chicken breast, broccoli, and carrots with a delicious garlic sauce.
