Ingredients:

  • 1 cup unsalted butter (softened)
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 7. Alpine Spiced Apple Cider Instant Original Drink Mix, 4 oz. box (10 packets; located next to hot cocoa mix).
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 (14 ounce) bag Kraft chewy caramels

Instruction:

  1. Preheat oven to 350°. To prevent the caramel from sticking to the cookie sheet’s bottom, line cookie sheets with parchment paper.
  2. Mix the flour, baking soda, baking powder, and cinnamon in a small bowl.
  3. Cream the butter, sugar, salt, and all ten packages of apple cider drink mix powder with an electric mixer until they are light and fluffy.
  4. Beat in eggs, one at a time.
  5. Add vanilla and mix well.
  6. Gradually add flour mixture to butter/egg mixture. Mix until just combined.
  7. Scoop out a walnut-sized (2 tablespoons) ball of cookie dough.
  8. In the palm of your hand, slightly press the dough ball down. Put the unwrapped caramel in the middle of your dough and completely enclose it with the dough.
  9. Roll the dough into balls and space them about three inches apart on cookie sheets covered in parchment paper.
  10. Bake for 11 to 14 minutes, or until the edges are just barely browned. It’s okay if they don’t appear perfectly finished in the middle.
  11. Carefully remove the parchment from the baking sheet and place it on the counter after the cookies have finished baking.
  12. Allow cookies to partially cool on the parchment. Carefully twist cookies off of parchment when they are cool enough to be firm but still slightly warm, and then let them continue cooling upside-down on the parchment or on a cookie rack. If they’re not turned over to cool, caramel may dribble out the bottom.
  13. Makes around 2-3 dozen cookies. Eat at room temperature or slightly warmed in the microwave.

  • 6 tbsp salted butter, cubed
  • 1/2 cup + 1 tbsp heavy cream

  • 1 cup salted butter, softened at room temperature
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 and 1/2 tsp vanilla extract
  • 2 large eggs
  • 3 tbsp reduced apple cider
  • All-purpose flour, 2 and 3/4 cups and 2 tablespoons ((415 grams))

  • 1/4 tsp salt
  • 1 and 1/4 tsp cinnamon
