The pectin’s magic will prevent the apples from softening any more while they bake in the oven. So after tasting, decide whether you want to cook for a longer or shorter period of time. Only you can know your apple al dente perfection level.
  7. Once it’s off heat, stir in 1 teaspoon vanilla. Into a 9×13 inch casserole dish, scrape the cooked apples and all the caramel-y goodness. Set aside to cool for a couple minutes.
  8. Make the cobbler topping:Preheat your oven to 375 degrees F.
  9. The dry ingredients—2 and 1/2 cups flour, 1 and 1/2 cups sugar, 1 teaspoon kosher salt, and 1 teaspoon baking powder—should be combined in a big bowl. Whisk it together.

  13. Bake at 375 for 45-55 minutes. The top should be turning light brown. It is finished when the top is light brown throughout (rather than just a few spots), and it is bubbling wildly. At this point, broil the cobbler for one to three minutes if you prefer an especially crispy top. No need to move the oven rack up. It gives it a more pronounced crisp browning, which I adore. Who doesn’t want a crispy, crunchy top? But don’t leave it unattended; I can’t tell you how many things in my broiler I’ve accidentally set ablaze. Check it every 60 seconds.
  14. You are supposed to let it cool completely. Vanilla ice cream is not even an option for serving; wait 15 minutes for the juices to set up, then dig in.
  15. After two days, move leftovers to the refrigerator by covering them loosely on the counter.
