We like to use a bag of frozen potatoes O’Brien in this Cowboy Skillet. The Potatoes O’Brien have peppers and onions to help incorporate some veggies into the meal. One-third cup of diced red or green bell peppers and the same amount of diced onions can also be added to cubes of southern-style potatoes.

Bacon, eggs and cheese make a keto breakfast when served over cauliflower rice. Our favorite way to enjoy this low-carb breakfast skillet is to pop a bag of frozen cauliflower rice in the microwave.

The potatoes and rice are interchangeable and the flavor is equally delicious. We make this keto breakfast skillet just as much as the Cowboy Breakfast Skillet with potatoes. Getting more veggies in the diet at breakfast helps get the day off to a great start!

Prepare cauliflower rice in the microwave while the bacon is sizzling. Remove the bacon to a paper towel and drain the skillet. Empty the cooked cauliflower rice into the skillet and make wells to crack eggs into. We don’t usually need butter for the cooked cauliflower rice.

Our skillet comfortably holds 5 to 6 eggs. Cook on low heat for about 6 to 8 minutes or until eggs are set. Once the eggs are cooked sprinkle shredded cheddar cheese on top. Cheese should melt quickly and the keto breakfast skillet with bacon, eggs, cheese and cauliflower is ready to serve!
