- Remove prime rib from oven and let rest for 20-25 minutes
- Cut the twine holding the bone to the roast before slicing and serving
- Take prime rib out of the refrigerator and let stand at room temp for 60-90 minutes
- Preheat oven to 225° F
- Place prime rib in a shallow roasting pan and place on center rack of oven and cook until internal temperature of 120° F (a 12 lb prime rib will take 3-4 hrs)
- Remove prime rib from oven and let rest for 30 minutes
- Turn oven temp up to 500° F
- Place prime rib back in oven for about 10 minutes to brown – final internal temp should be around 130° F when you remove it*
- Remove prime rib from oven and let rest for about 5 minutes (it needs much less time to rest than the traditional method)
- Cut the twine holding the bone to the roast before slicing and serving
*The roast will continue to cook after you remove it and the temp will “coast” to somewhere around 132-135° F by the time you slice and serve. This is perfect medium-rare temperature.
