I was watching a cooking show where a singer from the country goes around eating steak. I can’t recall the title, but I found it difficult to watch because of his annoying accent. However, I’m glad I stayed for the first five minutes because at one of the steakhouses, they had a fantastic steak being marinated and basted with what appeared to be a magical sauce called Diablo Sauce. I recorded it right away and began estimating the amount of work they were putting into it. Then I remembered the Googlez. As it turned out, I was able to locate the Ray’s the Steaks Entrecote Diablo sauce recipe!
I prepared a large amount of it tonight, marinated a strip of ribs in it, and then frozen them along with the remaining sauce in a container. Although I haven’t had an opportunity to try it with barbecued food yet, it tasted and smelled delicious on its own. The adobo peppers’ smoky flavor was evident, though it wasn’t as spicy as anticipated. Similar to a mildly tart barbecue sauce instead of a spicy one It sounds so good that I can’t wait to try the marinating ribs.
Regarding our ribs that were marinated, grilled, and basted in Diablo Sauce, I neglected to provide an update. They were only okay. With a few tweaks, I believe it works well as a marinade, but as a “bbq” sauce for meat or ribs, it fell flat. It requires a little more flavor and a kick. Definitely more of all the other spices, salt, and garlic, and a lot less oil is needed. It wasn’t as spicy as anticipated, even though it contained two cans of adobo peppers.
