When I moved to the U.S. in 1997, I spent a lot of time trying to satisfy my paleta craving but couldnt find anything that compared to the pure, bursting-with-fruit-flavor pops like those in Mexico. There are several ways to unmold ice pops. The best way, in my opinion, is to fill a pan or container at least as tall as your mold with warm—not hot—water, and then submerge the mold in it for 20 to 30 seconds, or until the pops loosen. After taking the mold out of the water, set it down on a solid surface. Holding the handles, slowly pull upward to produce crisp, clean pops. Give the pops a little more time in the warm water if they seem difficult to unmold. As an alternative, just leave the ice pops out to come to room temperature until they are easily taken out of the mold without losing their shape. This method works, but the process can be messy, especially when making dairy-based pops, and the pops won’t have clean edges. Running individual molds under warm water is a third option, but it can be a little uneven, so I suggest using the dipping method instead. Creamy or fruit-filled paletas can be more difficult to remove from the mold, but just be patient and take your time.
After filling the molds, if you’re using traditional molds with separate covers and built-in sticks, cover them with lids and freeze the pops for about five hours. If, however, you’re using molds that call for the addition of a stick, then freeze the pops for about two hours or until they’re partially frozen, then carefully insert the stick into the center of the pop (it should stand on its own) and freeze for an additional three hours or until they’re fully frozen. The effectiveness of your freezer, the kind of mold you’re using, and your pop base all affect how long things take to freeze. Your molds will work best if you place them in the freezer’s back, where the temperature is lowest. Pops can be kept in their molds for a few days, but it’s advisable to remove them from the molds the same day to prevent color fading and texture changes. Step 4: Unmolding.

Paletas are ready to eat once they’ve unmolded, but it’s best to wait a little. Pops should be frozen for at least 30 minutes after being wrapped in resealable plastic bags or placed in airtight plastic containers (layered with wax paper or plastic wrap). Ice pops retain their shape a little better thanks to this second freezing, which slows down their melting rate while you’re eating them. Ice pops can be stored for three to four weeks if properly wrapped. After that, they start to lose their flavor. Furthermore, why would you want to hold onto them for such a long time?

Spraying the inside of your popsicle molds with a thin layer of non-stick spray can help to prevent the popsicles from gripping onto the internal surface. Silicone molds have soft bases and are much easier to remove frozen popsicles from. Some may even have tabs to help pull off the mold. You could even consider buying push pop molds.
