Scrambled Egg Gravy Recipe
Ingredients:
- 2 Tbsp. bacon fat
- 3 eggs, lightly beaten
- 3 Tbsp. flour
- 2 cups whole milk
- ½ tsp. salt
- ¼ tsp. pepper
Instructions:
- In a large skillet over medium heat, reheat the bacon fat. Add the eggs and cook until scrambled egg curds begin to form, stirring frequently but slowly.
- Stir in the flour. Gradually add the milk while constantly whisking to ensure a smooth consistency. Add the salt and pepper.
- Stirring frequently, keep cooking over medium heat until the mixture thickens and reaches a simmer. Cook and stir it for a few more minutes to allow more liquid to evaporate if you’d like it thicker.
If you don’t have bacon fat, you can substitute butter or another type of oil. Additionally, this turns the gravy vegetarian, which is a fantastic choice.
Although you could use stock in place of milk for the liquid, I think the milk makes this gravy much more delicious. In place of whole milk, you can also use canned evaporated milk. Oat milk can also be used; just make sure it’s a thicker barista blend that you enjoy the flavor of and that it’s not sweetened.
Note: You can add one to non-fat milk to make whole milk. 5 tablespoons of heavy cream. Alternatively, combine 1/4 cup of half-and-half with 3/4 cup fat-free milk. You can simply use fat-free milk, but the flavor won’t be as intense.
These egg gravy recipes can be made with cornstarch rather than flour; you just need to adjust your method a little.
To make the hard-boiled version, transfer the half-cup of milk and the bacon fat into a small bowl. Add in 4 teaspoons of cornstarch. Mix until it is well-combined. Transfer the leftover one and a half cups of milk into a saucepan. Stir in the cornstarch mixture and the salt and pepper. Stirring frequently, heat over medium heat until it simmers and thickens to your desired consistency. Cooking it longer will thicken it more. Stir in the chopped hard boiled eggs.
For the scrambled egg version, cook the eggs according to the directions in the bacon fat. Next, incorporate 1 and a half cups of milk, as well as the salt and pepper. Combine 4 teaspoons cornstarch and 1/2 cup milk in a small bowl. Add that to the egg mixture and cook over medium heat, stirring frequently, until thickened and simmering.
Can You Reheat Egg Gravy?
These two variations of Southern egg gravy do not reheat well. They really are best when they’re freshly made. When you give it some thought, scrambled eggs from leftovers aren’t that great either.
If you do have leftovers, though, you can keep them in the refrigerator for up to three days in an airtight container. Next, cook in the microwave for 30 second increments, stirring after each one, until thoroughly heated. Alternatively, you can reheat it in a small saucepan over medium-low heat on the stove, making frequent stirs.
These breakfast gravies, I swear, are incredibly delicious and never cease to amaze me. I can’t decide if Southern Tomato Gravy or this egg gravy is my favorite. By the way, you can make both vegetarian by substituting butter for the bacon fat.
