Ingredients:
- 2 cups all-purpose flour
- 1/2 cup firmly packed brown sugar
- 1 cup butter (softened)
- 3 8 ounce packages cream cheese, softened
- 3/4 cup sugar
- 3 large eggs
- 1 1/2 teaspoons vanilla extract
- 3 Granny Smith apples, peeled, cored, and roughly 3 cups of finely chopped apples.
- 2 tablespoons sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup firmly packed brown sugar
- 1 cup all-purpose flour
- 1/2 cup quick cooking oats
- 1/2 cup butter (softened)
- 1/2 cup caramel topping for drizzling after baked
Instruction:
- Preheat oven to 350 degrees F.
- In a medium bowl, combine flour and brown sugar. When the mixture is crumbly, add butter using a pastry blender, food processor, or two forks. Press evenly into a greased or parchment or heavy-duty aluminum foil-lined 9×13 baking pan. Bake 15 minutes or until lightly browned.
- Cream cheese and 3/4 cup sugar should be thoroughly blended using an electric mixer at medium speed in a large bowl. Then add eggs, 1 at a time, and vanilla. Stir to combine. Pour over warm crust.
- Combine diced apples, 2 tablespoons sugar, cinnamon, and nutmeg in a small bowl. Spoon evenly over cream cheese mixture.
- To make the streusel topping, combine all the ingredients in a small bowl. I like to really blend it by working the butter into the mixture with my clean hands. A food processor is inadvisable because it would grind the oats.
- Sprinkle Streusel topping over apples. Bake 40-45 minutes, or until filling is set. Store bars in the refrigerator for up to five days after they’ve reached room temperature. Can be frozen up to 4 months.
- Drizzle with caramel topping and let cool. Serve cold and enjoy!.
