For my husband’s birthday earlier this year, we made some of the Persian recipes passed down by his family and the Tahdig came out perfectly (I’ve got my eye on the Tahdig Trio for when it’s back in stock to make cooking our favorite Persian rice even easier!). Now that my little man is old enough for solids, it’s been so fulfilling to make his food; I’ve been steaming vegetables with the included steamer, and it’s brilliant!
When we first purchased the Always Pan, we gave it a test drive with all our everyday simple foods — eggs in the morning, basmati rice to accompany our baked salmon, and even pasta. The basmati rice was honestly more perfect than I’ve ever made (I’m now realizing it was my old pans’ fault for all the inconsistencies, NOT MINE!) and as skeptical as my husband was about cooking pasta in this pan, a full bag of our favorite organic pasta from Costco cooked up beautifully, even straining right there in the pan thanks to the spout.
Not only is this pan incredibly pleasing to look at, but the minimalist hearts inside of us felt like a pan that reportedly replaces eight pieces of cookware seemed too good to be true. We have a humble kitchen with very sparse storage, and the day we removed all the old stacked and scratched-up pieces from the cupboard and replaced it with this one pan (and the included strainer) there was actually a moment that we stepped back and said “wow.”
In this recipe, the rice is cooked in nine cups of water until it’s al dente. Which is strange because the Always Pan only allows for roughly half an inch of clearance after adding nine cups of water. There will undoubtedly be an overflow once two cups of rice and a steamer basket are added due to water displacement. And that’s before you boil the water! So I changed this to seven cups of water and added two tablespoons of Kosher salt instead of the three that the recipe called for.
Next, combine 1 and a half cups of cooked rice with the oil and saffron in a pan over low heat. Stir on medium-high for 3 minutes.
Now, I will slip the pan lid into the Damkoni. If you’re not using an Always Pan with the Damkoni accessory, cover the pot (making sure it’s securely away from the heat source) with a thick dish towel folded in half square. Cover the towel with the lid. Reduce heat to low and cook for 25-30 minutes. The longer you cook it, the crispier it will get.
Now cover the saffron rice with the remaining cooked rice. Do not stir to combine. Maintain the saffron rice at the base of the rice.
Cooking the rice in the Always Pan steamer basket is instructed in the recipe. This, I suppose, is due to the steamer basket, an Always Pan attachment that facilitates straining the al dente rice. An improved approach would be to discard the basket and transfer the rice into a mesh strainer to remove any remaining water. It’s difficult to just lift the rice out of the pan because the steamer basket is fully submerged in boiling water (and may even collapse if the little handles fall into the boiling water while you’re skimming the foam).

So even if you happen to have an Always Pan, cook the rice without the steamer basket! Just pour the rice into a mesh strainer to drain it and then rinse the rice under cold water, as directed.
