Ill admit I was a little taken aback that these apple popsicles are as tasty as they are the first time I made them! I didnt expect pantry staples to come together so well for a delicious summer treat. Fresh, light and perfectly sweet, they are so fun and fruity. Add Juice: Insert the reusable popsicle sticks into the molds, then pour your desired juice up to the fill line. Freeze: Let sit for 7 minutes (no need to put it in the freezer). Popsicles should fully freeze in that time.

For this apple juice popsicle recipe (also called ice lollies in the UK!) you will need:
- Apple juice – you can of course use juice you make at home with fresh apples, but if not then store bought is good too.
- Elderflower cordial – this isnt a necessity, but does give a nice touch of floral flavour to complement the juice.
- Apple slices – I suggest using red apples or a sweeter variety, rather than green, to add to the popsicles.
Recipe tips and notes
- Stir the juice mixture well. Make sure to combine the juice well with the cordial before pouring into your popsicle molds.
- Add the stick once almost solidified. Depending upon the type of mold you have, you want to add the stick just before the popsicle has solidified so it doesnt sink (or go wonky, as in my photos here, whoops . . .)
- Leave to freeze for at least six hours. I tend to find that overnight is better to be sure they are frozen solid, but around six hours usually works.
