Two sticks of butter is 1 cup. Four sticks is one pound, and you’ll see a lot of pound cake recipes call for four sticks, or a whole box of butter. Elsewhere in the country, butter is sold in 1/2 pound rectangular blocks. These blocks of butter have 16 tablespoons, or one cup.
Our butter sticks are easy to measure! One full stick of butter equals 1/2 cup, or 8 tablespoons. Our half sticks equal 1/4 cup of butter, or 4 tablespoons. They can be used interchangeably in recipes. You dont have to use measuring cups to measure butter. Use the pre-marked wrappers to measure by tablespoons, 1/4 cup and 1/3 cup.
If you have a collection of leftover butter pieces and need a cup amount for a recipe you can use the “displacement method.” Fill a liquid measuring cup with 1 cup cold water. Place cold butter (this wont work with soft butter) into measuring cup until water level reaches the amount you need for the recipe. i.e. if recipe calls for 1/3 cup butter, put butter pieces in until water level rises to 1 1/3 cups. Drain water and use that butter for the recipe.
