Protein-packed bacon, eggs and cheese make a classic breakfast recipe. When potatoes o’brien are added to these breakfast classics it’s often called a cowboy breakfast, country breakfast, or farmer’s breakfast. Growing up on a farm I know how much work each day holds. When you need energy for a big day like a cowboy or farmer, start with a meal like this one!
Strips of smoky bacon are fried in the same skillet that the potatoes, eggs and prepared in making this an easy one-skillet meal.
When a well is made in the cooked potatoes and eggs are cracked and cooked in each spot. Sunny side-up eggs create an eye-appealing and delicious breakfast or brunch. This classic breakfast combo tastes even better than it looks!
Another delicious breakfast with bacon is our popular Breakfast Casserole with Bacon. A sweet and filling casserole with potatoes is our Sausage Hashbrown Casserole. All of these recipes are perfect for any meal of the day!
We like to use a bag of frozen potatoes O’Brien in this Cowboy Skillet. The Potatoes O’Brien have peppers and onions to help incorporate some veggies into the meal. One-third cup of diced red or green bell peppers and the same amount of diced onions can also be added to cubes of southern-style potatoes.
Just like our Easy Kielbasa and Sauerkraut this meal tastes great in a cast iron skillet or in a modern non-stick skillet.

Keto Breakfast Skillet Option
Bacon, eggs and cheese make a keto breakfast when served over cauliflower rice. Our favorite way to enjoy this low-carb breakfast skillet is to pop a bag of frozen cauliflower rice in the microwave.
The potatoes and rice are interchangeable and the flavor is equally delicious. We make this keto breakfast skillet just as much as the Cowboy Breakfast Skillet with potatoes. Getting more veggies in the diet at breakfast helps get the day off to a great start!
Prepare cauliflower rice in the microwave while the bacon is sizzling. Remove the bacon to a paper towel and drain the skillet. Empty the cooked cauliflower rice into the skillet and make wells to crack eggs into. We don’t usually need butter for the cooked cauliflower rice.
Our skillet comfortably holds 5 to 6 eggs. Cook on low heat for about 6 to 8 minutes or until eggs are set. Once the eggs are cooked sprinkle shredded cheddar cheese on top. Cheese should melt quickly and the keto breakfast skillet with bacon, eggs, cheese and cauliflower is ready to serve!
- More butter may be used to help potatoes brown but not burn
- Can add 1/3 cup chopped onion and 2/3 cup chopped green bell pepper
- Can chop fresh potatoes and decrease cooking time
- If using a cast-iron skillet make sure it is well seasoned before use
- Bacon bits may be used, but frying bacon in a skillet and chopping up bigger pieces maximizes flavor in this skillet meal

What are some healthy breakfast foods?
Since breakfast is the first meal, it is essential to have a good source of protein, to choose the most natural and least processed foods possible, such as boiled or scrambled eggs, sweet potatoes, plantains, wholemeal bread, grains like granola, oatmeal.
What did Cowboys eat for breakfast?
These breakfasts were made from dried beans, flour, ground corn, lard, hard-tack crackers, coffee beans, and broadsides of salt-cured meat. The cowboys would cook breakfast every morning over a hot fire in cast iron barbecues, skillets, and pots. Meals were mostly made up of hot coffee, a big pot of beans, and biscuits baked in a cast-iron pot.
