A-”Grenadine syrup is the name given to a thick pomegranate concentrate sold in bottles,” says Leonard Solomon, president of Leonard Solomon`s Wines and Spirits, 1456 N. Dayton St. ”It`s used in drinks, middle eastern sauces and soups. At one time, the syrup was made from pomegranates grown in the Grenadine islands in the West Indies; that`s how it got its name.

You can make your own grenadine syrup by squeezing 10 large pomegranates to yield 1 cup juice. Mix this with 1/2 cup sugar and simmer until thermometer registers 205 degrees. Skim foam, cool and use immediately. To juice pomegranates, use a juicer with a plastic or ceramic orange juicer head; if you use a metal head, the juice will darken.
