- 5 petite red potatoes
- 4 large eggs
- 1 pound bacon
- 8 ounces shredded mexican cheese (for frying)
- 6 burrito sized tortillas
- 2-4 cups vegetable oil (for frying)
- Boil a pot of water and add the potatoes. Boil for 15-20 minutes until tender. When the potatoes are done, dice them into small pieces.
- Make the bacon using a griddle, skillet, or oven. Chop the bacon into small pieces.
- Scramble and cook the eggs using some of the bacon grease to add flavor.
- Add the diced potatoes, bacon pieces, and scrambled eggs to a bowl and mix until well combined.
- Place a tortilla on a clean surface. Add approximately 1/2 cup of filling and fold the sides of the tortilla inward. Roll it up tightly to form a chimichanga.
- Heat vegetable oil in a deep fryer or a large, deep skillet to approximately 350°F (175°C).
- Carefully add the chimichangas to the hot oil, a few at a time, and fry until golden brown and crispy, turning occasionally to ensure even cooking. This should take about 2-3 minutes per batch. Once cooked, transfer the chimichangas to a paper towel-lined plate to drain any excess oil.
