I want to make this chocolate tiramisu cake this weekend. The creamy mixture contains 125ml Marsala, and I think that might be a bit of a faff to find as Im not near a bit supermarket. I could go on an adventure to find some, but if I could substitute it it that would make life easier. I was thinking maybe some kind of combination of brandy/desert wine/white wine, all of which I have. If anyone had any ideas they would be much appreciated!
Pretty sure with that amount of cream, coffee etc. then desert wine and a dash of brandy would be fine. I would reach for the cream sherry, myself (substituting one sweet, fortified wine for another…) But if you track down some Marsala, then you can make zabaglione with it another time, which is officially the best pudding going.
