We’ve been making these awesome Vietnamese banh mi bites for years and shared the recipe in 2010. But for some reason it disappeared, perhaps during one of our web overhauls. So it’s back again for you all to enjoy. They’re the perfect appetizer bites filled with your favorite banh mi fillings.
Vietnamese Banh Mi Bites
- 1 baguette , cut into slices
- 1/2 cup (120 g) pate (optional)
- 1/4 cup (60 ml) mayo (optional)
- 1 small cucumber , sliced thin
- 2 cups (480 ml) Vietnamese cooked meats
- 1 cup (240 ml) Vietnamese pickled carrots and daikon
- 1/2 cup (120 ml) fresh cilantro leaves
- Chopped fresh chiles or hot sauce
- Soy sauce (optional)
- Slice baguette into 1/4 inch thick slices. If using pate and mayo, add a light layer of each onto the baguette slices.
- Add a small slice of cucumber and top with some meat.
- Top with pickles, cilantro. If desired, add fresh chiles on top and drizzle with optional soy sauce. Repeat for all slices and arrange on serving tray.
