Cooking Frozen Enchiladas If the enchiladas are frozen: Bake at 350F covered with foil for 30 minutes, then uncover and bake another 20 minutes or until the cheese is golden and bubbling. If the enchiladas are thawed: Bake at 350F for 20 minutes, then uncover and bake another 5 to 10 minutes.
How To Make Beef Enchiladas
You may be surprised at how incredibly easy it is to make enchiladas. Especially these simple beef enchiladas.
Let’s face it. Your busy, I am busy, we all are busy. And, we are just trying to get dinner on the table. Am I right?
Inserting friendly reminder here. This recipe will make two pans of make ahead enchiladas. You can either go ahead and make one of the pans for dinner, or freeze both for later.
Let’s talk about exactly how to do that now.
First you will want to brown the ground beef, add in some spices, and then a little bit of enchilada sauce.
Side Note: We have A La Orden Enchilada Sauce, which is hands down the best store bought enchilada sauce, at Kroger. But if you don’t have a Kroger close by, you can get the enchilada sauce here. Or, you can use whatever enchilada sauce you have on hand…this recipe super flexible that way.
Next, you will coat the bottom of the pan with enchilada sauce.
Then you will warm up your tortillas in the microwave to get them nice and pliable for rolling.
Put one spoonful of your meat mixture into your tortilla, roll it up, and place in the pan.
Next you will add more enchilada sauce to the top of your filled tortillas. You want to make sure that the tops and sides are coated nicely.
For freezer enchiladas: If you are freezing the enchiladas stop here for now.
For making enchiladas now: Bake the enchiladas on 350 for around 15 minutes. Then, you will top with cheese, and bake for a few minutes longer. Just to get that ooey gooey cheesy goodness that is frankly speaking a necessity with these enchiladas.
Allow the enchiladas to cool for around 5-10 minutes before serving. This allows the cheese to settle a bit, and helps the enchiladas to hold together better when serving.
Feel free to add any toppings that you want to your enchiladas too. Our family loves to top with some sour cream and green onions.
