We’ll be honest: Homemade ramen noodles are a lot of work, and Sakai’s recipe requires some elbow grease (kneading by hand!) and special equipment (a pasta maker!), but don’t let that scare you off: It’s worth it, and we’re here to guide you every step of the way.
For chicken dashi (stock)
- 8 c. low-sodium chicken broth
- 16 dried shiitake mushrooms
- 30 g kombu (kelp), about a 10″ square piece
- 20 g dried bonito flakes (about 2 c. loosely packed)
For tare and chashu (marinade and pork)
- 1 1/4 c. low-sodium soy sauce
- 1 1/4 c. mirin
- 1/2 c. sake
- 1 1/2 c. water

How do you make homemade Ramen?
To start, you’ll need homemade baked baking soda (or kansui or jian shiu). The ramen dough itself is much stiffer than a typical homemade Italian egg noodle dough (really stiff) which means the typical hand kneading doesn’t really work for ramen. If you’ve ever made homemade udon noodles, it’s similarly stiff.

These bouncy ramen noodles have a delightfully chewy texture and can be made with little more than all-purpose flour and baking soda. I developed this recipe specifically because my other recipes for ramen noodles both rely on bread flour, which seems to be in short supply during this pandemic.
