Preheat oven to 180°C/350°F (all oven types). Oven: Bake for 15 to 20 minutes (for 250g/80z), or until melted through. For 500g/1lb brie, increase to 25 minutes. To check, gently touch the centre of the brie – it should feel very soft, like it is about to collapse if you press any harder.
Step 3: Place the Brie on a Cookie Sheet
Place the brie round, rind and all, on something oven and broiler safe. A cookie sheet or pie tin will work well.
Step 2: Set Oven to 350
Preheat the oven to 350 degrees F. Why is it that the dial on just about every oven in the places where Ive lived have the numbers rubbed off?

FAQ
Can you overcook brie?
Should baked brie be runny?
How long should you heat up brie?
Do you take the rind off brie before baking?
How do you know if Brie is done cooking?
The Brie is done cooking when it becomes soft and gooey in the middle! You can stick a knife or fork in the center and if it is easy to pierce or feels soft, then you know the cheese is ready. Be careful not to overcook the cheese otherwise it will become too runny. The perfect soft center will allow you to dip into or serve the Brie with ease.
How do you cook a Brie in the oven?
Let rest at room temperature for 30 minutes. 2 Preheat the oven to 350°F. Place the brie on a small sheet tray. Sprinkle the top with the fresh thyme and rosemary, and drizzle with honey. Bake for 20 to 25 minutes, until very soft. 3 Carefully transfer the brie, in the box or on the sheet of parchment paper, to a serving plate.
Should Brie be left on the counter before baking?
If possible leave your Brie on the counter for an hour before baking. This just takes the chill off the cheese and allows it to bake more evenly. Unwrap the Brie and place it on a square of parchment paper on a baking sheet with sides.
How do you know if brie cheese is melted?
It should feel soft and pliable. Brie will start to melt at warm temperatures very quickly, but I like to leave the cheese in the oven a little longer so the whole thing gets evenly warmed and will stay melted longer after you serve it. If you start to see the cheese oozing out of the rind, then go ahead and pull it out of the oven.
