My friend is making various cakes for a wedding in two weeks. She has made one sponge layer (egg, butter and flour). Does sponge freeze well? If so whats the best way to prep for freezing? Many thanks for any advice

What are the other cakes? I’d would probably have made the sponge cake last & had it fresh tbh as sponge is relatively quick and simple. It can be frozen but I don’t feel it’s quite the same as a fresh sponge but that may just be me. https://www.nigella.com/ask/freezing-cakes

@Allshallbewell2021 Yes, sponge cakes freeze beautifully. Interestingly, I have two different cakes in my freezer for a wedding. I wonder if it is the same wedding? It can be frozen but I don’t feel it’s quite the same as a fresh sponge but that may just be me. @SiegeOfBees I do a lot of baking and if you freeze a sponge when it has completely cooled down it tastes fresher than if you make it a couple of days before it gets eaten. Buttercream freezes well as well, so I freeze buttercream iced sponges all the time. In fact, a frozen sponge cake is easier to ice than a fresh one as there is no need to do a crumb coating. I bake large batches of cakes for the charity I fund raise for and they are always well appreciated.

Sponge freezes fine, freeze once cool wrapped in a layer of cling and into a freezer bag that can be tied/sealed. I only half thaw it before filling and icing, easier to handle when good and firm. Freeze ready to go, trimmed/levelled/split, whatever is needed.

Most cakes freeze well and it is usually best to freeze them without any icing or filling. After baking, make sure that the cake has fully cooled then wrap it tightly in a double layer of clingfilm (plastic wrap) and a layer of foil. If you have a large enough resealable bag then you copuld also put the clingfilm wrapped cake in this and seal tightly, expelling as much air as possible from the bag. If the cake has two layers then we suggest that you wrap each layer individually, as the layers could stick together a bit as the cake thaws.
