What could be a better way to start your day than with eggs, veggies and cheese? With the help of this easy make ahead frittata recipe, you can prepare a delicious breakfast or brunch that’s packed with flavor. And the best part is that you can make the dish ahead of time and freeze it until you’re ready to start eating!I was first introduced to the idea of a frittata by my cousin who is a chef. I had never heard of it before, but quickly came to appreciate the simplicity and flavours of this dish. It is sometimes referred to as an “egg pizza”. It’s not an omelette and not a quiche, though it bears a similarity to both. If you ask me, it’s just plain good!
I’ve made this frittata for our Christmas breakfast for years now. I always pair it with hash brown casserole as both can be made weeks ahead. I take them out of the freezer on Christmas Eve and let them thaw in the fridge overnight. Christmas morning, I pop them in the oven while we open stockings with the kids and by the time we’re done, a delicious family breakfast is ready to eat.
