I wasn’t always coming up with dairy free recipes. In fact, my daughter, Sophia, was 3 years old before we realized she had reactions to dairy milk.

For that reason, we switched her to almond milk. We have always lived in a rural east Tennessee town and at that time, 8 years ago, almond milk was the only readily available dairy alternative in our local grocery store.
While she is the only who drinks almond milk regularly, I pretty much only cook with almond milk now. It’s a way to make things safe for her and in most recipes, no one else can really tell a difference.

There are a ton of different pancake mixes to buy – so which do you use to make the best dairy free pancakes?
I actually prefer using Bisquick. But usually for no other reason that it’s what I have on hand. That’s because I use it to make homemade chicken and dumplings and almond milk waffles too.
Use any vegan milk! I’ve tried this week coconut (carton, not canned), vanilla almond, and unsweetened almond, and they’re all great. This recipe already contains vanilla and sugar, so any vanilla milks (vanilla almond, vanilla soy) may make your pancakes on the sweeter side.
Can you make coconut milk pancakes too?
Yes! In fact, I have made my homemade pancakes with coconut milk several times. If anything, they are actually better than almond milk pancakes.
They come out just a bit fluffier and with just a hint of coconut. If you have coconut milk, you can definitely use this same recipe and replace the almond milk with coconut milk, using the same measurements.
Almond milk and coconut milk are the only dairy alternatives I’ve tried, but I’m guessing that just about any dairy free milk will work with this pancake recipe. There are definitely more ways than just 1 to make fluffy vegan pancakes for sure!
What are the best almond milk pancake add ins?
We most often use fresh fruit as our favorite pancake add ins. I love this list from The Pioneer Woman. Since some of those are a little more involved, though, here are a few simple add ins that we do most often:
- Berries – Blueberries, Strawberries, Raspberries, Blackberries
- Pineapple
- Bananas
- Peaches
- Mango
- Dairy free mini chocolate chips [we love this brand].
- Chopped nuts – pecans, walnuts, almonds – any of your favorite really
- Canned pumpkin
- Chopped bacon or sausage pieces
- Peanut Butter
- Cinnamon
Most of these pancake add ins will need to be chopped and blended with your pancake batter as the last step of the recipe.
Pancake additions like peanut butter, canned pumpkin, cinnamon, and any other ingredient like that can be added at the end as well. You always want to add wet ingredients and any special add-ins, after you mix together your dry ingredients.
You can even change up your dairy-free pancakes by using vanilla almond milk or other sweetened almond milk versions that are available at your local store.
Expert Tip: Don’t over mix your pancake batter. A few lumps are actually good! This will make your pancakes an extra fluffy texture!
