This chicken soup recipe came to me after I came down with the WORST cold ever. I was on the verge of getting better, then all of a sudden I took a turn for the worst and spent an entire weekend sneezing, coughing and barely able to breathe.
It’s delicious and filling, either way! The next time you want a new take on an old classic, give this Lemon and Thyme Chicken Soup a try, it’s a family favorite at my house and I hope at yours as well! Happy Eating! A nice bight twist on an old classic.
…which brings us to this classic recipe today, kicked up a mega-notch with the addition of a mega-helping of fresh herbs.
This Herb-Loaded Chicken Noodle Soup recipe is simmered with loads of fresh herbs, for an extra fresh and flavorful twist.
So yeah, as I mention below, feel free to customize your own chicken noodle soup with whatever fresh (or dried) herbs you have on hand. And have fun with this one!
This year, though, it felt extra fun being able to walk outside while the soup was simmering and snip off my own fresh rosemary and parsley to season the broth. And then…I may have gotten a little carried away and brought in a literal bouquet of herbs. And then kept adding more…and adding more…and adding more…but guess what?
Truly. One of our favorite things about this city is that nearly all of the windows in flats are actually French doors that open into tiny little balconies overlooking the streets below. And needless to say, Barcelona’s balcony garden game is strong. On our block alone, our neighbors have absolutely decked out their tiny little balconies with just about every kind of hanging planters, trees, bushes, flowers, vegetables and herbs imaginable. And since the climate here is extra plant-friendly, and our street gets a nice afternoon full of sunshine, everything is fabulously alive and green and flourishing…which is very good news for this brown-thumbed new expat arriving on the scene.
Ingredients in the best chicken soup recipe
The best part isn’t just how delicious this chicken soup is, but also how wonderful the anti-inflammatory, cold-fighting ingredients are.
- Ginger: Great for digestion and a powerful anti-inflammatory agent to use in recipes.
- Garlic: Truly the best when you’re sick. Garlic is full of anti-bacterial and anti-inflammatory properties. That’s why we use 6 cloves of garlic in this soup. That’s right, you’re going to sick this cold’s ass.
- Turmeric: Super trendy and very good for you. Best when consumed with a black pepper to help for optimal absorption. This recipe calls for fresh turmeric (if you can find it).
- Chicken: We’re packin’ this recipe with protein too — and guess what? The chicken actually cooks in the soup broth, leaving it tender and making it easy for you!
- Fresh herbs: Rosemary & thyme add additional flavor in this recipe.
- Pearl couscous: Besides the veggies, the couscous is really the star because it helps to thicken the broth and keep the soup hearty. You’ll want to use pearl couscous (also labeled Israeli couscous in stores) in the recipe. It just provides the perfect texture for the soup. This is what pearl couscous looks like. I also know that they sell it at most Trader Joe’s and Whole Foods.

Is Rosemary good for chicken soup?
Rosemary is lemony-pine-like (and somewhat peppery) herb that can really brighten up a dish. It’s no wonder that it is one of the most popular herbs used in cooking. When it comes to chicken soup, rosemary can really elevate the flavors. Not only does it pair well with chicken, but it also helps to cut through any fatty or oily flavors in the soup.
