It has an open, tender crumb and airy texture that belies the fact that it is made with mostly whole grains. Spray with nonstick spray, cover with plastic wrap. Place in a warm area for 60 minutes, or until bread has risen until double.

Egg wash: 1 egg + 1 tsp water (to brush on risen loaves of dough prior to baking)
