This recipe was inspired by Dan at work. (Hi, Dan!) I make Rotisserie Chicken all the time, but Ive only done rotisserie turkey once, years ago. Dan asked me how to do it for his Thanksgiving dinner, and I gave him the outlines of my basic poultry rotisserie technique. Then, my local Acme grocery* had a $0.69/lb sale on turkey, and I knew where my next blog post was coming from!
As usual, I had to deal with the weather for this blog. Todays forecast is for a high of 12*F, with wind gusts between 30 and 50 miles per hour. I almost didnt do the turkey on the rotisserie because of this!

The lid of the grill should be lowered and remain closed to ensure even roasting. But do check quickly that it is rotating. Adjust if needed. About 10 to 15 minutes cooking time per pound, which means that a 14 pound turkey may require 2 to 4 hours on the rotisserie.

After an incredibly successful turkey at last years Thanksgiving using Alton Browns recipe, I gave this one the same initial treatment: brined in a mixture of salt, vegetable stock, pepper, allspice, and candied ginger, then stuffed with some aromatics before cooking. It then went onto the spit and slowly turned until the breast meat hit 165°F.
While I was right on with the skin, which turned out undeniably delicious, the meat did not quite live up to my standards set by the smoker. It still beat out the oven-roasted version in terms of juiciness and overall taste, though, but it lacked that little extra imparted by the smoke which raises a turkey to great new heights, leaving me a new challenge for the future: smoked rotisserie turkey!
Smoked turkeys are so juicy and flavorful, they put oven-roasted birds to shame. Ever since getting a smoker, no turkey has been cooked using any other method in my house. Theres one big catch though—the smoke leaves the skin tough and leathery, and although Ive known a few people willing to exert the extra effort needed to eat it; for the most part, I consider it inedible.
