Known for his bleach-blonde hair, in-your-face persona, and of course, his popular show, “Diner, Drive-Ins, and Dives,” Guy Fieri is one of the go-to chefs for fun, flavor-filled recipes.
With the Super Bowl around the corner, I decided to take a stab at his epic Trash Can Nachos, which is essentially super nachos in tower form with a whole lot of extra cheesy goodness which he refers to as “Super Melty Cheese” or simply “SMC.”
With this being my second adventure through Flavortown, I knew this seemingly straightforward recipe would have some flavor home runs mixed with interesting twists.

As the cheese melted, I kept whisking it to avoid burning. I then added a generous few dashes of cayenne pepper and cumin, a handful of minced jalapenos, a pour of jalapeno juice, and two scoops of pico de gallo.

There aren’t too many ingredients involved, but I had to make a few substitutions
I started by making the marinade for my carne asada, which is typically made with grilled and sliced beef.
The recipe calls for only 8 ounces, but I enjoy steak so I wished the amount was doubled.
Fortunately, the marinade was easy to throw together. I squeezed the juice of a lime into a bowl, added about four minced garlic cloves, and a teaspoon of kosher salt.
I put the 8 ounces of steak and marinade in a plastic bag, then refrigerated it for about 30 minutes. Advertisement

Does Guy Fieri eat Trash can Nachos?
The name Guy Fieri is almost synonymous with ridiculously delicious food, so it’s no wonder a dish called Trash Can Nachos graces the menu at his Tequila Cocina restaurant in Boston. Trash can nachos are a delicious copycat of the Guy Fieri’s classic. Smothered in super melty cheesy sauce and absolutely loaded with toppings, you’ll never have better nachos in your life than these! Have you ever gotten nachos out in a restaurant? They come out and look impressive?
What’s your favorite part of the Nachos?
The SMC was my favorite part of the nachos. It was so flavorful and packed with all the goodness of cheese and spices that really made this dish so addictive. The cumin was a wonderful touch in flavor that was unexpected but tasted fantastic in the queso. I’ll be adding cumin to every queso I make from now on.
How do you assemble Trash can Nachos?
To assemble the Trash Can Nachos: Preheat the oven to 400 degrees and on a non-stick baking pan spread out an even layer of chips. Drizzle warm SMC over the chips evenly followed by a layer of black bean puree, shredded cheddar and finally diced brisket (or your choice of protein). Drizzle with Guy’s Bourbon Brown Sugar BBQ sauce.
